Let's Make Lunch - Turkey and Rice Lettuce Wraps

Turkey and Rice Lettuce Wraps

For the filling:

1 pound ground turkey

1/2 red bell pepper, roughly chopped

1/2 green bell pepper, roughly chopped

1/2 yellow bell pepper, roughly chopped

1 small yellow onion, sliced

1 cup shitake mushrooms, diced

1 small carrot, grated

1 tablespoon of chopped garlic (I used canned)

2 teaspoons of ginger paste (I used canned)

salt

pepper

For the sauce:

1/3 cup of hoisin sauce

1/4 cup soy sauce

1 tsp red pepper flakes

1 tsp sriracha sauce

1 1/2 tablespoons rice vinegar

To serve:

Any broad leaf lettuce (romaine, bibb, butter, etc.)

Jasmine rice

Cilantro

Sliced sweet peppers

Sliced scallions

1) Prep your vegetables by chopping the bell peppers, slicing the onion, grating the carrot and dicing the shitake mushrooms. 

2) In a large pan on medium heat, pour in a few tablespoons of your preferred high-heat cooking oil (I used vegetable.) Add the turkey and break up the meat while cooking. Season with salt and pepper and cook until browned, being careful to not overcook the meat. Remove the browned turkey from the pan 

3) Without wiping out the pan, add another tablespoon of oil and increase the heat to medium high. Add your onion and bell peppers and cook for 5-7 minutes, stirring occasionally. 

4) While the onion and bell peppers cook, make your sauce. Combine the hoisin, soy sauce, pepper flakes, sriracha and Marukan Rice Vinegar. Stir well. 

5) Back to the stove - once the peppers and onions have cooked for 5-7 minutes, add the mushroom and carrot to the vegetable mixture. Cook for 4 more minutes. 

6) Reduce the heat to medium and add the chopped garlic and ginger paste. Stir well. Season the vegetable mixture with salt and pepper - cook for 2 minutes, stirring frequently. 

7) Add the ground turkey back to the pan, pour in the sauce, and stir everything together. Cook for 3-4 minutes until the sauce is warmed - stir frequently so all of the meat and vegetables are coated in the sauce. Once done cooking, remove the pan from the stove and let the mixture sit 5 minutes before serving. 

8) Sprinkle the sliced scallions over the vegetable and meat mixture and serve it on top of lettuce, adding rice and toppings to create delicious lettuce wraps. Enjoy!
