Coco Pineapple Margarita Float

Makes 2 servings
3 ounces of coconut tequila (I use 1800 Coconut, but you can use any coconut tequila or unflavored tequila as well.)
2 ounces of sweet orange liquor (like Gran Marnier or Cointreau)
1.5 ounces of fresh lime juice
3 ounces of fresh orange juice
2 large scoops of pineapple sherbet
Shaved or crushed ice (optional)
Sugar - granulated or in the raw (optional, for the rim)
Pineapple Leaves (optional, for the garnish)
1 ounce of simple syrup (optional, if you like your cocktail extra sweet)
1) Start by shaving your ice. You can get my ice shaver here. I shave enough ice to fill 2 glasses half-way.
2) Sugar your rim. Pour 1/4 cup of your sugar on a plate. Cut a lime in half and rub it on the rim or side of your glass. Then, roll your glass in the sugar to coat your glass. You can do this on the rim of your glass, side of your glass, etc.
3) Make your cocktail. Fill a cocktail shaker with ice. Add the tequila, orange juice, lime juice and orange liqueur to the cocktail shaker. If you like your cocktail extra sweet, you can add your simple syrup now. I usually make mine without it. Shake the cocktail shaker for 20 seconds, or until well mixed.
4) Assemble your cocktail. Add the shaved ice to your sugared glass, and top it with a big scoop of pineapple sherbet. Strain your margarita from the cocktail shaker on top of the sherbet and ice, and garnish your cocktail with the pineapple leaves.
Your cocktail will start out a little tart, but will become so mellow and sweet as the sherbet melts. Try this recipe, and let me know if you love it!!
