Recipe - Picante Shrimp Bites

Summer is in full effect, and that means time for summer parties and celebrations! Check out the recipe below for the PERFECT appetizer to satisfy your guests with a quick and delicious light bite - PICANTE SHRIMP BITES!

INGREDIENTS:

1 bag of Tostitos Scoops Chips

1 lb of medium-large shrimp

Salt, pepper and seasoning for the shrimp - I used the Le Courage seasoning from ttspices.com - use my code EV10 for 10% off at checkout!

Guacamole - you can purchase 1 package of pre-made guac from the store, or use my recipe below!

1/2 cups of cooked corn - I used frozen roasted corn that I heated up on the stovetop.

1/2 cup of red onion, diced into small pieces

1/4 cup of cilantro, finely diced

1 small jalapeno, seeded and diced

Hot sauce - I used Cholula

1) After preparing the corn, dicing the onion, jalapeño and cilantro, prepare your guacamole if you aren’t using premade:

1 avocado

1/2 tablespoon of cilantro, finely chopped

1 tablespoon of red onion, finely chopped

1/2 teaspoon of finely chopped jalapeño

1 minced garlic clove

The juice of half of a lime

Salt and pepper to taste

Cut the avocado in half, remove the seed, and scoop the flesh out of the shell. Mash the avocado in a bowl until only a few large chunks remain. Add the remaining ingredients and continue mashing until well combined.

*When making fresh guacamole, always use a very ripe avocado and serve your guac as soon as possible after making it. To keep it fresh, return the avocado seed to the bowl after the guacamole has been made.

2) Season your shrimp with salt, pepper, and your desired seasonings (season so that the shrimp are covered with seasoning, but the spices should not be caked on.)

Heat a tablespoons or two of oil in a frying pan over med/high high heat until hot. Carefully spread the hot oil to cover the pan. Add the shrimp to the pan and cook on each side until opaque - about 2.5 - 3 minutes per side. When done, transfer the cooked shrimp to a plate to cool for about 5 minutes.

3) Start the assembly by laying out your scoops chips on a platter (make sure to use the chips that have not been broken - broken chips will not hold the toppings well. )

Add a small scoop of guacamole (1-2 teaspoons) to the bottom of each chip. Add a few kernels of corn, a few pieces of red onion, a few diced pieces of jalapeño and a sprinkle of fresh cilantro to each chip, on top of the guac. Add a piece of shrimp to the top, and then top it all off with a few drops of hot sauce.
