Japanese Sweet Potato Salad with Creamy Tahini Dressing
Hello, my loves! Now that we are in the thick of the fall season, my focus is on FLAVOR! I have been working on several recipes to share with you all, and I am DELIGHTED to share the first one! Check out the video and the full recipe, below:
This Japanese sweet potato salad, PACKED with a ton of flavor and highlights a few unique ingredients. Japanese sweet potatoes/yams are more dense, and slightly sweeter than the orange sweet potatoes that are more prevalent. Their flesh is white and when roasted, the outside gets crispy and the inside is so creamy!
This recipe seems like it has a lot of ingredients, but really, most of them are used in the CREAMY TAHINI DRESSING. Tahini is made of ground sesame seeds, and has a taste that is reminiscent of almond butter, but slightly bitter. This dressing really taps into several flavors - a little bitter, a little sweet, a little savory, and soooo good! INGREDIENTS
Makes 2 servings
2 cups of Arugula
1 small head of Romaine Lettuce
2 Japanese Sweet Potatoes, peeled and chopped into bite size pieces
1/4 cup Feta Cheese, crumbled
1/8 cups of Roasted Almonds, finely chopped
1 small package of smoked salmon
Red Onions, thing sliced
Creamy Tahini Dressing
2 tbs. of tahini
1.5 tbs. of olive oil
1 tsp. of dijon mustard
1 large garlic clove, finely chopped
2 tsp lemon juice
1/2 tsp. of honey
Salt and Pepper to taste
1) Roast the sweet potatoes
Pre-heat your oven to 375 degrees
Peel and chop the sweet potatoes into small bite-sized pieces
Toss the chopped sweet potatoes in olive oil, salt and pepper. Pour onto a lined baking sheet and
roast for 30-35 minutes.
2) Create the Tahini Dressing by combining all of the ingredients into a bowl and briskly mixing with a whisk or fork until well combined, about 1 minute.
3) Build the salad with the arugula, lettuce, feta cheese, smoked salmon, red onion, chopped almonds, roasted Japanese sweet potatoes and top with the creamy tahini dressing. Then, enjoy your dope salad!
PRO TIP - take some of the harshness from red onions by soaking them in room temperature water for 15 minutes before adding to your salad.
